What Foods Should You Not Vacuum Seal?
Vacuum sealing is not right for every food. The foods to avoid sealing, from fresh garlic to soft cheese, and the safety reason why.

Vacuum sealing is a storage aid, not a preservation magic trick. Because it removes oxygen, a handful of foods are actually riskier sealed, and a few others are just impractical. Knowing the list keeps you safe.
The safety list: do not seal for room-temperature storage
Removing oxygen favours anaerobic bacteria, including the one behind botulism, so these should never be vacuum sealed and left on the shelf:
- Fresh garlic and onions. Raw garlic in a sealed, low-oxygen bag is a known risk, and garlic in oil doubly so.
- Fresh mushrooms. They spoil fast and do badly in a sealed, warm environment.
- Soft and fresh cheeses. High moisture plus low oxygen is the wrong combination; keep them in their packaging (see how to vacuum seal cheese for what does work).
If you do seal any of these, they must go straight to the fridge or freezer, never a pantry shelf.
The practical list: seal, but with a step
- Gassy raw vegetables (broccoli, cabbage, cauliflower) release gas that puffs the bag; blanch and cool them first.
- Freshly cooked food should be cooled fully before sealing, or condensation ruins the seal.
- Delicate items (soft berries, fresh bread) get crushed; freeze them firm first, or use a gentle setting.
