Flour feels like it should last forever. It doesn't, and the reason depends entirely on which flour and how you store it.

The pattern is oil. Refined white flour has had the germ removed, so it stores for years once oxygen is gone. Whole-grain and nut flours keep the oily germ, which goes rancid, and no barrier meaningfully stops that. The freezer is the answer for those.

How to tell if flour has gone off

  • Smell: fresh flour is nearly odorless. Sour, musty or a crayon-like note means the fats have gone rancid.
  • Sight: any webbing, tiny moving specks or clumping means pests or moisture; discard it.
  • The rancid flour is not usually dangerous, but it will taste off and can ruin a bake.

Storing it well

For everyday use, an airtight container on a cool shelf is plenty. For a genuine long-term reserve of white flour, seal it in mylar with an oxygen absorber, which is what unlocks the 10-to-15-year figure. Keep it cool: as with every staple, a hot storage spot cuts those numbers hard.

Do not add an oxygen absorber to nut flours expecting years; freeze them instead.
