How to Store Flour Long-Term

White flour keeps 10 to 15 years sealed right; whole-wheat goes rancid in months. How to store each, and the weevil trick you shouldn't skip.

Flour splits the same way rice does: the refined version stores for years, the whole-grain version doesn't. The reason, again, is oil.

Why white flour lasts and whole-wheat doesn't

Milling white flour removes the germ, the oily part, leaving mostly stable starch that keeps for years once oxygen is gone. Whole-wheat flour keeps the germ, and that germ oil goes rancid within months at room temperature, the same problem as brown rice. No mylar bag fixes rancid oil, so whole-wheat belongs in the freezer, not in long-term storage.

How to store white flour

Seal it in a mylar bag with a correctly sized oxygen absorber, inside a food-grade bucket, and keep it cool and dark. That's the same method as any dry staple, covered in our rice and beans guide.

Freeze first to beat weevils. Flour often carries flour-weevil eggs from the mill. Freeze the flour for 3 to 4 days before sealing to kill them, or you may find live weevils in your sealed bag months later.
