How to Store Nuts Long-Term

Nuts are high in oil, so they go rancid in months at room temperature. Why the freezer is the answer, and how to seal them.

Nuts are one of the foods people most often try to store long-term and are surprised to find spoiled. The reason is the same as with brown rice and whole-wheat flour: oil.

Why nuts go rancid

Nuts are packed with unsaturated oils, and those oils oxidise and turn rancid with exposure to air, warmth and light. Removing the oxygen slows it, but heat still drives it, so a nut stored warm goes off long before a nut stored cold. This is why no barrier bag makes nuts a decades-long staple.

How to store them

The winning move is cold plus sealed:

  1. Portion the nuts into vacuum-sealed bags or mylar bags to remove the oxygen.
  2. Freeze them. The cold is what buys the 1 to 2 years.
  3. Take out a portion at a time and let it warm to room temperature before opening, to avoid condensation.

Cold does the work; the seal helps. Vacuum sealing or mylar slows rancidity, but the freezer is the real preservative for oily foods. Store nuts you'll actually eat within a couple of years.
