How to Store Dehydrated Food for the Long Term

Dehydrated food only keeps for years if it's fully dry and sealed against air. How to condition, package and store it, and what shelf life to expect.

Dehydrating removes the water that microbes need, but stored badly, dried food reabsorbs moisture from the air and spoils. Long-term success is about locking that dryness in.

Step 1: dry it fully, then condition

Food that looks dry can still hold pockets of moisture. Before sealing for the long term, condition it: pack the cooled dried food loosely in a jar, seal it, and shake it once a day for about a week. If you see any condensation on the glass, it isn't dry enough, so dry it more. Conditioning also evens out moisture between drier and wetter pieces.

Step 2: package against air and moisture

Once conditioned, seal it in one of two ways:

Size a correctly rated oxygen absorber to the bag, and get a clean full seal.

The oily items are the exception again: fat goes rancid regardless of the barrier, so treat dried oily foods as short-term and keep them cool.

Keep it cool and check it

Store sealed dried food cool and dark, and glance at it over time. A bag that has lost its tight, oxygen-free firmness, or shows any moisture or mold, has failed its seal. When judging whether a food is still safe rather than merely good, follow NCHFP guidance.
